Summer eating

Also, happy birthday Sam! Since it’s summertime, I’ve got a lot more resources to try out my barely-formed cooking skillz, so I’ve been going crazy. A friend of mine suggested I post recipes as a blog post, and here are some of my favorites I’ve tried so far this summer!

First off, from my adorable English boys at SortedFood.com, is the most amazing breakfast recipe I’ve ever come across. Apple Blackberry Scones!

I’ve made these twice now, and they are, to say the least, incredible. I’ve translated some of the ingredient measurements below, since these guys are from the UK and they use grams instead of cups in a lot of cases.

Butter- 3.5 tablespoons

Flour- 2 cups

Sugar- 1/4 cup

Seriously, try these scones. They are AMAZING.

Next up, again from our friends at Sorted, is a great summer dinner recipe- Italian Chicken Burgers!

Because my brother is allergic to tree nuts, I had to make my own pesto out of basil from my mom’s garden, and I don’t much like mayo so I left that out, but otherwise I stuck to the recipe, and it did not disappoint. The flavors compliment each other perfectly, and I can’t wait to make this again.

Next up, another Italian-inspired recipe (surprise, right?), Ravioli with Grape Tomatoes and White Wine!

So I’m a big fan of creative pasta recipes, since there are only so many times you can have simply marinara sauce before you start to get bored. This recipe did not disappoint. The white wine sauce gives everything a sharp, fresh taste, and it all comes together fairly simply, so there isn’t a lot of hassle. The only problem is that I’m still underage, so I had to have my mom buy the wine, but once I’m 21, this will be at the top of my repertoire!

Lastly, here are my favorite things to add to regular mac and cheese (buy white cheddar kinds if you’re feeling extra classy) to make it more interesting:

Canned tuna (it sounds weird, but with regular Kraft mac and cheese, it’s delicious)

Halved cherry tomatoes

Shredded fresh basil (or dried basil, if it’s winter)

Roasted garlic (best with white cheddar mac and cheese)

Red pepper flakes (if you’re in the mood for something spicy)

 

That’s my summer food roundup so far. By the end of the summer I should have more, but this should keep you well-fed and happy for a while.
